Stir up these quick Jamaican banana fritters with just 7 simple ingredients for breakfast or as a healthy snack! A perfect way to use up overripe bananas!

Banana fritters are a type of fried pancakes with a high content of mashed bananas in the batter, which are very quick to prepare.

I first met Jamaican banana fritters at a small café in the style of an American diner in the city where I live. My husband spotted the Jamaican banana fritters on the menu and ordered them, and it wasn’t long before I tried to recreate them at home. Sadly, the café no longer exists, but I’ve since perfected the recipe and it’s so easy and good that we like to make it for breakfast, as a second breakfast, or as a healthy snack in between.

If you have leftover overripe bananas, turn them into these quick banana fritters!

Jamaican Banana Fritters

Stir up these quick Jamaican banana fritters with just 7 simple ingredients for breakfast or as a healthy snack! A perfect way to use up overripe bananas!

Ingredients

For the Batter

  • 3 overripe bananas (about 3 medium, 360 g when peeled)
  • 1 tablespoon (12.5 g) light brown sugar, packed, store-bought or homemade
  • 1/4 teaspoon (0.65 g) ground cinnamon
  • Pinch of salt
  • 1/2 teaspoon (2 g) vanilla extract
  • 1 cup (125 g) all-purpose flour
  • 1 teaspoon (4.6 g) baking powder

For Serving

  • Granulated sugar or raw cane sugar

Instructions

  • In a medium bowl, mash together the bananas with the sugar, cinnamon, salt, and vanilla.
  • Add the flour and baking powder and stir just until combined.
  • Heat a small sauté pan to medium heat. Add just enough oil to coat the bottom of the pan and heat for 2 to 3 minutes (add a drop of batter to the pan or hold a wooden stick in it; if the oil sizzles, it is hot enough).
  • Add 1/3 cup of batter to the pan. Once bubbles appear in the center of the surface and the bottom is golden brown, flip it once and continue frying until the other side is golden brown and until no longer doughy in the center. Repeat the cooking process with the remaining batter. Adjust the heat setting if necessary. Add more oil to the pan between the batches.
  • Place cooked fritters on a plate lined with a paper towel.
  • Serve warm with sugar sprinkled on top.

Notes

You can also cook the banana fritters in a large sauté pan and fry several fritters at a time. Be sure to leave a little space between them.
Packed Light Brown Sugar: You may also use granulated sugar or raw cane sugar instead of light brown sugar.
