Stir up these quick Jamaican banana fritters with just 7 simple ingredients for breakfast or as a healthy snack! A perfect way to use up overripe bananas!
Ingredients
For the Batter
3overripe bananas(about 3 medium, 360 g when peeled)
1tablespoon (12.5 g)light brown sugar,packed, store-bought or homemade
1/4teaspoon (0.65 g)ground cinnamon
Pinchof salt
1/2teaspoon (2 g)vanilla extract
1cup (125 g)all-purpose flour
1teaspoon (4.6 g)baking powder
For Serving
Granulated sugar or raw cane sugar
Instructions
In a medium bowl, mash together the bananas with the sugar, cinnamon, salt, and vanilla.
Add the flour and baking powder and stir just until combined.
Add 1/3 cup of batter to the pan. Once bubbles appear in the center of the surface and the bottom is golden brown, flip it once and continue frying until the other side is golden brown and until no longer doughy in the center. Repeat the cooking process with the remaining batter. Adjust the heat setting if necessary. Add more oil to the pan between the batches.
Place cooked fritters on a plate lined with a paper towel.
