This colorful summer fruit salad is healthy, refreshing, and so delicious, with or without an irresistible 2-ingredient dressing!

Fruit salad makes for a great little snack or dessert and is a good way to get lots of vitamins in. It’s also perfect to bring to a party, potluck, or brunch.

I’ve always been a huge fan of all kinds of fruit salads, no matter the season. But this fruit salad packed with all those addictive summer fruits is the best. I’m always so excited for summer fruit season.

This fruit salad features blueberries, strawberries, nectarines, apricots, watermelon, and banana. If you like, you can put in some chopped fresh mint leaves as well.

I like to use flat white-fleshed nectarines for this, but you can substitute yellow-fleshed, regular round nectarines, or just use peaches. By the way, this applies to all the fruits used, which you can feel free to replace according to your personal preference and seasonal availability.

Making this healthy and yummy fruit salad does not take much time to prepare.

A super simple 2-ingredient dressing makes it extra special and delicious, but it’s totally optional. The dressing is made of fresh lemon juice and powdered sugar. You can use organic raw cane powdered sugar if you can find it. Or opt for almost any other sweetener actually. Just make sure that it dissolves, if not already liquid.

Instead of using the dressing, you can go ahead and simply sweeten the fruit salad with any sweetener of your choice, like maple syrup or agave. However, I think fruit is sweet enough on its own and does not require any additional sweetener. You could even just add fresh lemon juice to your fruit salad.

The fruit salad also tastes great without dressing. You can enjoy it with a dollop of homemade whipped cream, which is particularly good when served as a dessert.

Summer Fruit Salad

Ingredients

For the Dressing (Optional)

  • 2 tablespoons (30 ml) fresh lemon juice
  • 2 tablespoons (15 g) powdered sugar

For the Fruit Salad

  • 1 1/2 cups (225 g) blueberries
  • 1 1/2 cups (225 g) strawberries, sliced
  • 2 flat white-fleshed nectarines, sliced (see notes below)
  • 3 apricots, sliced
  • 1 cup (150 g) watermelon, chopped
  • 2 bananas, sliced
  • Handful fresh mint leaves, chopped (optional)

Instructions

  • For the dressing, if using, whisk together the lemon juice and powdered sugar in a small bowl.
  • In a large bowl, toss together the blueberries, strawberries, nectarines, apricots, watermelon, banana, and optionally mint leaves. If using the dressing, pour it over the fruit and toss to coat. Serve and enjoy!

Notes

Nectarines: Feel free to sub yellow-fleshed, regular round nectarines, or peaches for the flat white-fleshed nectarines.
