This colorful summer fruit salad is healthy, refreshing, and so delicious, with or without an irresistible 2-ingredient dressing!
Ingredients
For the Dressing (Optional)
2tablespoons (30 ml)fresh lemon juice
2tablespoons (15 g)powdered sugar
For the Fruit Salad
1 1/2cups (225 g)blueberries
1 1/2cups (225 g)strawberries,sliced
2flat white-fleshed nectarines,sliced (see notes below)
3apricots,sliced
1cup (150 g)watermelon,chopped
2bananas,sliced
Handful fresh mint leaves,chopped (optional)
Instructions
For the dressing, if using, whisk together the lemon juice and powdered sugar in a small bowl.
In a large bowl, toss together the blueberries, strawberries, nectarines, apricots, watermelon, banana, and optionally mint leaves. If using the dressing, pour it over the fruit and toss to coat. Serve and enjoy!
Notes
Nectarines: Feel free to sub yellow-fleshed, regular round nectarines, or peaches for the flat white-fleshed nectarines.
