How to Make Brown Sugar

Learn how to make brown sugar at home in only 5 minutes using just 2 ingredients! If you run out of store-bought brown sugar, can’t find any to buy, or just want to make it yourself, you can use this recipe to get an exact substitute of the one you can buy! My recipe includes details for making both light and dark brown sugar.

What is Brown Sugar?

Brown sugar is an ingredient in baked goods and other sweet and savory recipes.

It is not a natural brown sugar, but granulated sugar (white sugar) that gets its brown color by the addition of molasses.

Brown sugar adds moisture, depth, and a rich, caramel flavor to any recipe that calls for it.

Brown sugar is a key ingredient in chocolate chip cookies and gives them their chewy texture.

Brown Sugar Ingredients

You just need 2 ingredients to make brown sugar. That’s it!

  • Granulated sugar. Also called white sugar.
  • Molasses. Use an unsulphured molasses.

How to Make Brown Sugar

This recipe is super easy to make. You just need a bowl and a spatula.

  1. Combine the granulated sugar and molasses in a bowl.
  2. Use a spatula to completely incorporate the molasses into the sugar until no lumps remain and the brown sugar has a uniform color.

What is the Difference Between Light Brown Sugar and Dark Brown Sugar?

The only difference between light brown sugar and dark brown sugar is the amount of molasses added. Light brown sugar contains less molasses, has a lighter flavor and is of a more golden color. It contains about 3.5% molasses. Dark brown sugar has about 6.5% molasses, almost double the other, and is therefore more intense in flavor and darker in color.

How to Make Brown Sugar

Learn how to make brown sugar at home in only 5 minutes using just 2 ingredients! If you run out of store-bought brown sugar, can’t find any to buy, or just want to make it yourself, you can use this recipe to get an exact substitute of the one you can buy! My recipe includes details for making both light and dark brown sugar.

Ingredients

Light Brown Sugar

  • 1 cup (200 g) granulated sugar
  • 1 teaspoon (7 g) molasses

Dark Brown Sugar

  • 1 cup (200 g) granulated sugar
  • 2 teaspoons (14 g) molasses

Instructions

  • Combine the sugar and molasses in a medium bowl.
  • Use a spatula to bring the ingredients together as well as you can.
  • Use the spatula to incorporate the molasses into the sugar by pressing remaining lumps of molasses against the sides and the bottom of the bowl to smash them out.
  • Continue until no lumps remain and the brown sugar has a uniform color.
  • Store in an airtight container at room temperature.

Notes

Other Methods: Instead of a spatula, you can use a spoon to incorporate the molasses into the sugar or just your fingertips to rub the molasses into the sugar.
